- 3 pounds small red potatoes ,quartered
- 1/4 cup olive oil
- 1/2 tsp freshly ground pepper
- 3 large garlic cloves , thinly sliced
- 2 tsp dried rosemary
- 2 tbs minced fresh parsley
- 2 tbs minced fresh chives
Roast uncovered 1 hour or until potatoes are tender, turning them 2 to 3 times.
Remove from Oven, Before serving toss with parsley, and chives.
This was VERY good. Good way to make potatoes.
