Fettuccine Alfredo with Garlic Shrimp and Scallops





Debbie Macomber is the #1 New York Times bestselling author of the poplar Cedar Cove seris of novels. She is not only a successful writer, but a accomplished cook. In her novels food and suppers play a important part, it is central to the important relationships in our lives.  I have read many of her books. I took this recipe from the novel 44 Cranberry Point.

In a large heavy saucepan over med heat I warmed 2 tbs of oil. Added 5 cloves of garlic minced. Cooked 30 sec while stirring.  I patted the scallops dry with a paper towel. * 8 ounces of bay scallops*  Added the scallops along with 8 ounces of peeled, deveined large shrimp thawed, and pepper.  Cooked stirring often for 5 minutes. Removed from heat.
I cooked 12 ounces of fettuccine pasta and reserved 1/4 cup cooking water, drained the pasta.
I melted 6 tablespoons of unsalted butter in a large saucepan over low heat. Added the cooked pasta to the pan to coat with butter.  I then stirred in 1 cup Parmesan cheese, reserved cooking liquid, 1/2 cup half and half, and some crushed red pepper .  Taking a tong I placed the pasta on the plate and put the shrimp and scallops atop the pasta.

Added some green beans and a salad with homemade Tailmix bread that was still warm and dug in...

It was Delicious!!!! I will be sure and make this again. And to think I thought making it would be hard.. NO.. every easy..  Hope you all get a chance to try it!
